RECIPE: Avigail’s Grandmother's Dairy-Free Apple Cake

4 cups diced apples, approx 4 apples(macs are best)
1¼ cups sugar
2/3 cups oil
2 eggs, beaten
3 cups unsifted flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon cinnamon
½ cup raisins
1 tablespoon applesauce OR 1 mashed banana
Chopped walnuts if desired – some in batter & some on top

Method:
Mix apples & sugar and let stand for 15 minutes. Add oil, then eggs, then dry ingredients. Mix well. Grease bottom & sides of 2 loaf pans. Bake at 350 degrees for 1 hour.

Cool before removing from pan.
