and tasty.

quartered pieces
5-6 fresh thyme
sprigs
1/2 tbsp. butter
1 tbsp. olive oil
1/8 tsp. freshly
cracked pepper
Pinch of salt
Kitchen equipment
needed:
Pot for cooking
pasta
Skillet
Wine pairing
suggestion:
The Zucchini pairs
well with a Sauvignon Blanc, Sancerre or other dry white wine.
Preparation
Bring a pot of
salted water to boil.
First cut the ends
off the zucchini, then cut the zucchini in half. Next, cut it in half
lengthwise, and then again to make quarters. Finally, chop the quarters into 1/4-inch
pieces. Repeat with the other half of the zucchini.
Take the thyme
leaves off the sprigs.
Cooking Instructions
When the water has
boiled add the pasta and cook for 9 minutes.
When the pasta has
been cooking for 5 minutes, heat the butter and olive oil over medium-high
heat. Add the zucchini and thyme and sauté for 3-4 minutes. When the pasta is
done add about 1/2 a cup of the pasta water and the pasta to the skillet. Turn
the heat to high and let simmer for 2-3 minutes, or until almost all the pasta
water has evaporated.
Transfer to a bowl
and sprinkle with Parmesan cheese.
Serve and enjoy!
