2.5 cup cooked quinoa cooled
5 large eggs lightly beaten
1/2 tsp salt
1/3 cup fresh chives
1 cup finely chopped kale
1 onion finely chopped
3 cloves garlic finely
chopped
1 tsp cumin
1 tsp baking powder
1 cup bread crumbs
1/3 cup crumbled feta or other
cheese
Preheat oven 400 F. Oil one baking sheet.
Combine quinoa, eggs, salt,
chives, kale, onion and cumin. Stir well. Add baking powder and bread crumbs.
Let sit for a few minutes to absorb moisture. Stir in cheese.
I used an ice cream scoop to
make the patties. You can also form with a spoon.
Bake for 20 minutes. Flip over
and bale for 5 more minutes. Yields 12. Serve hot, cold or room temp.
