2 cups white vinegar
1 tb kosher salt
1 tb zatarains spice mix (or if you prefer, this can be
skipped or replaced with another seasoning mix)
Add vinegar, salt, and spice mix to a boil, poured over peppers, close the jar, cool to room temp then refrigerate.
Put a little bit of the chopped peppers and/or the juice
into sauces or with the onion and garlic at the beginning of a sautee and it
gives a very nice tangy heat.
