Ingredients
Iceberg Lettuce, cut into wedges of desired size and
additional mixed greens if desired
1-2 large Cucumbers, cut in quarters and sliced
1 medium Red Onion, diced
1 pint Cherry Tomatoes, cut in halves and quarters
Crumbled Blue Cheese
Olive Oil
Red Wine Vinegar
Salt and Pepper
Method
1. Combine
blue cheese, olive oil, the juice of one lemon and salt and pepper in a small
bowl. Mix with a whisk until combined and creamy dressing begins to form.
2. Rinse
and chop vegetables according to the directions above.
3. Arrange
iceberg wedges on top of mixed greens (if using) and scatter cucumbers, red
onion, tomatoes and bacon on top.
4. Dress
with blue cheese dressing.
